Introducing the Australian Macadamias Technical Guide: A new resource for food industry professionals

Over many years, Australian Macadamias has worked to inspire global food and beverage professionals with consumer insights, innovation news and production updates from Australia’s macadamia industry. As a result, awareness of the benefits macadamias bring to product development and interest in embracing them as an ingredient has never been higher.

But as interest has grown, so too has demand for more technical guidance. Product developers, quality assurance professionals and procurement teams told us they wanted deeper support in understanding the features, benefits, technical, nutritional and quality attributes of macadamias. They are also seeking support on how to work with macadamias across a diverse range of product formats, from chocolate and beverages to ice cream, cereals and snacks.

We listened. And after several years of research, consultation and development, we are proud to introduce the Australian Macadamias Technical Guide – a comprehensive new resource created to help unlock the full potential of macadamias in product formulation.

Developed in partnership with the Food Innovation team at the Queensland Department of Primary Industries, the guide brings together the latest technical knowledge and best-practice insights in one user-friendly reference.

The guide includes:

  • An overview of Australia’s macadamia industry, its growing regions, crop management and industry standards
  • Kernel specifications and compliance, including style conventions, processing, sizing and physical, microbiological and chemical standards
  • Guidance on kernel storage, packaging, shelf life and handling best practices
  • Kernel processing options including roasting, pasteurisation and dicing
  • Nutritional data and health benefit insights
  • Application-specific considerations for sectors such as chocolate confectionery, ice cream, dairy alternatives, snack foods and oils
  • A kernel style matrix aligning macadamia format to application
